Back-timed plan

  1. 3:00 pm 4 days before — Put the turkey in the refrigerator to thaw (bottom shelf, on a tray)
  2. 10:15 am — Switch the oven on to 325 °F / 160 °C
  3. 10:35 am — Turkey in the oven (planned for the long end of the range)
  4. 1:30 pm — Start checking the temperature; it might be ready from here
  5. 2:30 pm — Latest finish: out of the oven, cover loosely and rest
  6. 3:00 pm — Carve and serve

Based on USDA FSIS safe-thawing guidance (refrigerator at 40 °F / 4 °C or below; never thaw on the counter). Roasting times are our own planning ranges: ovens, birds and stuffing vary, so use a food thermometer and cook to 165 °F (74 °C). Use the plan to work back from serving time, not as a substitute for checking the bird.

How big a turkey, when to thaw it and when to start roasting

A frozen turkey cannot be hurried. A 15 lb bird needs close to four days in the refrigerator, and a mistake in the other direction is just as costly: a bird thawed on the counter spends hours in the temperature range where bacteria multiply. This turkey thawing calculator starts from your guest count, recommends a size, and then works backwards from the time you want to eat to tell you when to start thawing, when to switch the oven on, when the turkey must go in and when to start checking.

Thawing times follow the USDA Food Safety and Inspection Service guidance: about 24 hours in the refrigerator for every 4 to 5 lb, or about 30 minutes per pound in cold water. Roasting times are our own planning ranges at 325 °F (160 °C), because published tables differ and no official standard exists; the safe finish is a measured temperature of 165 °F (74 °C), not a clock.

How to use the Turkey Size, Thawing & Roasting Planner

  1. Enter the guests and how much turkey each should get: 1 lb if there are plenty of side dishes, 1½ lb if you want leftovers.
  2. Set the serving time. If you already bought the bird, enter its weight in lb or kg instead of using the recommended size.
  3. Choose refrigerator or cold water thawing, and tick stuffed if you will stuff it.
  4. Read the size, the thaw time and roasting range, then follow the back-timed plan. Copy it into a note or a message.

Turkey Size, Thawing & Roasting Planner features

Size from guests

Pounds per person (1, 1¼ or 1½) rounded up to a whole pound, with the equivalent in kilograms.

Two thawing methods

Refrigerator days (range and a whole-day plan) or cold-water hours with the half-hourly water change.

Roasting range

A low and a high time for unstuffed or stuffed birds; the plan uses the long end so the turkey can rest rather than keep everyone waiting.

Back-timed plan

Every step is shown as a clock time, with “4 days before” when it starts on an earlier day.

Metric and imperial

Weights in lb or kg; temperatures in °F and °C, with a fan-oven figure.

Thawing times by weight

These are the USDA figures for a turkey kept in its original wrapping. The refrigerator must be at 40 °F (4 °C) or below, and the bird should sit on a tray on the bottom shelf.

Safe thawing and cooking rules

  • Never thaw on the counter or in warm water. The outside warms up long before the middle thaws.
  • Cold water: keep the turkey in a leak-proof wrapper or bag, submerge it in cold tap water and change the water every 30 minutes. Cook it immediately afterwards.
  • Refrigerator-thawed turkey stays safe in the refrigerator for 1 to 2 more days, so a day of slack is fine.
  • Check the temperature in the thickest part of the breast, the innermost part of the thigh and the wing. All must reach 165 °F (74 °C). Stuffing cooked inside the bird must reach 165 °F too, which is why many cooks bake it separately.
  • UK guidance: the Food Standards Agency also advises thawing in the refrigerator on a tray at the bottom, and cooking until the meat is steaming hot throughout with no pink and clear juices.
  • Refrigerate leftovers within two hours and eat them within three to four days, or freeze them.

Planning the whole meal

The turkey is usually the longest job. Once it is out, resting for 20 to 40 minutes frees the oven for roast potatoes and vegetables. Use the meal timing planner to back-time every dish together, check other meats in the meat doneness chart, and scale side dishes with the recipe scaler. For oven markings in gas marks or fan temperatures use the cooking converter.

Turkey Size, Thawing & Roasting Planner FAQ

How long does it take to thaw a 20 lb turkey?

About 4 to 5 days in the refrigerator (24 hours for every 4 to 5 lb), or 8 to 10 hours in cold water, with the water changed every 30 minutes. Start the refrigerator method on the Sunday for a Thursday dinner.

How much turkey do I need per person?

Plan 1 lb per person with plenty of other dishes and 1½ lb if you want leftovers. For ten guests that is a 10 to 15 lb bird.

How long does a turkey take to cook per pound?

At 325 °F (160 °C), allow roughly 12 to 16 minutes per pound for a medium-sized unstuffed bird, a little less per pound for very large ones. Our tool gives a range, and the thermometer decides when it is done.

Can I roast a turkey that is not fully thawed?

Not safely: the outside will overcook while the middle lags behind. Finish thawing in cold water, and allow a longer cooking time if it is only partly frozen.

What temperature should the turkey reach?

165 °F (74 °C) in the thickest part of the breast, the innermost part of the thigh and the wing, as advised by the USDA. Check more than one spot.

Should I rest the turkey?

Yes, 20 to 40 minutes loosely covered. It keeps the juices in and the temperature rises a little while it rests, and you can use the oven for the sides.
